Coconut Flour & Banana Pancakes – Gluten & Dairy Free [not vegan]

There is nothing quite like Monday holidays and long weekends when the sun starts to shine. This morning I was inspired to make some Sunday style breakfast: pancakes, obviously.

This recipe is an adaptation of 3 different pancake recipes I found online — and decided to make my own variation.

It’s super simple and packed with the zinc, potassium and vitamin b complex vitamins from the banana, this is not such a bad dish for your beauty either. Mind you, I splurged for a little organic maple syrup and as it is made with eggs and raw honey, this recipe is not suitable for vegans.

Ingredients You Need:

  • 2 Ripe & Freckled bananas
  • 3 organic & free range eggs
  • 1 tbs honey
  • 1 tsp vanilla extract
  • 2.5 tbs coconut flour
  • 3/4 tsp Ceylon cinnamon
  • Coconut oil

To Top:

  • Organic Maple Syrup
  • Organic strawberries (sliced)

Directions

Mash up the two ripe bananas in a medium bowl

Beat in the three organic & free range eggs (if you can get them direct from the farmer, all the better).

Add the cinnamon (ceylon organic – my favourite is here from Simply Organic for $7.80 USD), honey (raw and organic – my favourite is here for $9.59 by GloryBee) and vanilla extract (organic – my favourite is here from Simply Organic for $8.80 USD).

Add two and a half tablespoons of Organic Coconut Flour – this one I bought in Norway, but you can find a great alternative here on iHerb.

Simply combine the ingredients all together in the bowl and make **SMALL** pancakes on a frying pan on **LOW MEDIUM** heat (I use about 4 on an electric stove). The reason being is the banana means it will take a bit longer to cook. While they will naturally be darker than normal pancakes, to avoid burning them you will need to keep the temperature low.

Fry on low heat using coconut oil as your non-stick oil (if you chose to use oil). My favourite coconut oil is this one by Artisana – raw and organic (although the raw point is kind of defeated when you start to fry with it ;) hehe

Top with some organic Maple Syrup (again, this one is from Norway, but this is one of my favourites that you can find on iHerb for $12 USD).
